Ingredients

Instructions

  • Generously prick sweet potatoes with a fork.
  • Place sweet potatoes directly on middle rack of the cold oven.
  • Place a foil-lined baking sheet on bottom oven rack.
  • Turn oven to 425 and set timer for 60 minutes (the oven preheating is part of the 60 minutes).
  • When the timer ends, do not open the oven door. Turn the oven off and leave sweet potatoes in for another 45 minutes. This step allows the meat of the potato to separate from the skin.
  • Remove, let cool, and enjoy!

Notes

You may end up with some residue on your oven rack. Simply wipe off with a wet rag or brush while the oven is warm.

Slow Cooker Creamy Fiesta Chicken

Ingredients

  • 1 lb chicken breast
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) corn (drained and rinsed)
  • 1 can (10 oz) diced tomatoes & green chiles (Rotel)
  • 1 packet (1 oz) taco seasoning
  • 8 oz cream cheese

Instructions

  • Line your slow cooker for easy clean up.
  • Place chicken breasts in the bottom of the slow cooker and sprinkle with taco seasoning.
  • Pour all other ingredients in the slow cooker and cover.
  • Cook on LOW for 4 hours.
  • Take out chicken breast, shred, return to slow cooker, and stir well.
  • Turn slow cooker off and let chicken sit and absorb for 15 minutes.
  • Serve in shells or tortillas for tacos, on chips for nachos, or in a bowl for a healthier option.

  • 1/2 cup honey
  • 3 cups Cheerios

Instructions

  • Line an 8x8 dish with parchment paper.
  • In a medium saucepan, melt the SunButter and honey over medium heat until fully combined.
  • Remove from heat and stir in the Cheerios.
  • Pour the mixture into the lined dish.
  • Cover and refrigerate until cooled (about an hour).
  • Cut, serve, and enjoy!

Notes

Store leftovers in the refrigerator. These bars are meant to be eaten cold.

Ingredients

  • 1 14.5 oz can petite diced tomatoes (set aside 1/2 can)
  • 1 14.5 oz can petite diced chipotle tomatoes
  • 1/2 cup onion
  • 1/2 cup cilantro
  • 2 tbsp lime juice
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1 tsp sugar
  • 1 jalapeno (optional)

Instructions

  • Setting aside 1/2 can of tomatoes, combine all of the remaining ingredients into a food processor and PUREE.
  • Pour the pureed mixture into a large bowl.
  • Pour the 1/2 can of tomatoes into the food processor and CHOP. This will give the salsa a nice consistency.
  • Pour the chopped tomatoes into the large bowl with the pureed mixture and stir well.
  • Enjoy with your favorite tortilla chips!

For Small Food Processors:

  • STEPS 1 & 2 can be done in 3 smaller batches- The order of the ingredients does not matter. Pour each batch into a large bowl and mix well. Proceed to STEP 3.

Ingredients

  • 9 cups Corn or Rice Chex Cereal
  • 1 cup Enjoy Life semisweet chocolate chips
  • 1/2 cup SunButter
  • 1/4 cup butter (or butter substitute for dairy free)
  • 1 tsp vanilla
  • 1 1/2 cups powdered sugar

Instructions

  • Pour cereal into a large bowl & set aside.
  • In a microwave-safe bowl, combine chocolate chips, SunButter, and butter and microwave uncovered for 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth.
  • Stir in vanilla.
  • Pour mixture over cereal, stirring until evenly coated.
  • Pour into a gallon-sized Ziploc bag.
  • Add powdered sugar, seal bag, and shake until well coated.
  • Spread on waxed paper to cool.
